Stuffed Mushrooms

Ingredients

2 medium flat mushrooms (stalk removed)

200 grams Weight Watchers cottage cheese

2 tablespoons chopped parsley or chives

 

Instructions

Step 1: Pre heat oven to 180 degrees

Step 2: In a bowl combine cottage cheese and the herb of choice (either parsley or chives).

Step 3: Divide mixture in half and put into mushrooms.

Step 4: Place mushrooms in an oven proof tray and bake for approx 20 mins or until cottage cheese has browned.

Step 5: While the mushrooms are baking prepare a side salad with spinach leaves and tomato.

Step 6: Remove mushrooms from the oven and serve with side salad.
