Instructions
Step 1: Pre-heat oven to 180 degrees
Step 2: In a large bowl combine eggs and cottage cheese and whisk
Step 3: Add mushrooms, bacon, chives and pepper stir.
Step 4: In a dish about 25cm X 25cm line with mountain bread (Do not do this until ready to add egg mix as it will dry out). Make sure bread goes to the edges
Step 5: Pour in egg mix
Step 6: Lay the sliced tomato on the top.
Step 7: Bake for approx 50 mins or until brown on top and cooked in the middle.
Serve with Green salad
Serves 6 (Will keep in the fridge. Bread will not go soggy) |
